Christmas 2006

What a great day. Santa was good to Benjamin this year. He received lots of games (wack-a-mole, chutes and ladders, elefun, etc). He also received several monster trucks and playdoe stuff. He received several cool toys from family members (racetrack, blocks, a Thomas train, and an Oregon State jogging outfit). Thank you to everyone. We all slept in..Benjamin woke up at 8a.m. We could not believe it. We then opened presents and had breakfast. See Food for thought. We then assemble several toys and played all day. We ate an early dinner (turkey, gravy, sweet potatoes). Like I said, It was a great day.

Food For Thought Friday


Meatloaf

2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs, beaten
1/2 cup KRAFT Original Barbecue Sauce, divided

PREHEAT oven to 375°F. Mix all ingredients except 1/4 cup of the barbecue sauce.
SHAPE meat mixture into oval loaf in 13x9-inch baking dish; top with remaining 1/4 cup barbecue sauce.
BAKE 1 hour or until cooked through (160ºF).

Serving Suggestion
Serve this comfort food with mashed potatoes and a steamed vegetable, such as broccoli.

Substitute
Substitute ketchup for the barbecue sauce.

Santa Got Stuck

Poor Santa got stuck in our chimney. I know it sounds weird, but it’s true. His feet made it down, but his belly was one size too large for the flue. His reindeer are up on our rooftop.His sleigh is still loaded with toys. And Santa, that kindly old fellow,is making a whole lot of noise. We called the police and the sheriff. They showed up with ladders and cranes. They brought all their winches and pulleys,plus bungee cords, cables, and chains. They’re working right now to extract himby hoisting him slowly back out.It might take all day because Santais more than a little bit stout. If you don’t have presents this morning,we’re sorry you’re having to wait. But Santa’s still stuck in our chimney.He may be a day or two late. Until then, please hide all your cookies,though Santa may find this severe. At least then he’ll fit down the chimney when he comes on Christmas next year.

Food For Thought Friday


Breakfast Casserole


Hint: shred cheese, slice mushrooms, and chop onions and ham the day before you need this, and the preparation will go much faster when you have to put it together!

1 1/2 lbs. Monterey Jack cheese, shredded
3/4 lb. fresh sliced mushrooms
1/2 large onion, chopped
1/4 cup butter
1 cup ham, cubed
11 beaten eggs
1 3/4 cups milk
1/4 cup flour
1 tbsp. chopped parsley
1 1/2 tsp. salt

Preheat oven to 350 degrees.
Butter a 9X13 dish.
Put half the cheese in a dish.
Saute mushrooms and onions in butter until tender, place over cheese.
Distribute ham.
Beat eggs, milk, flour, parsley and salt, then pour evenly over casserole.
Top with remaining cheese.
Bake at 350 degrees for 45 minutes.

The Pant's

Benjamin got up this morning and got dressed for school. This was not your typical morning because today was his Christmas program for school. He was wearing his church clothes...which was a white turtleneck,black pants, black socks, and black shoes. After getting dressed he walks over to daddy and says so proudly "I have pants on just like you daddy",as he twirls around. He was so excited. Today they have their pogram, they get to exchange gifts, and have a pizza party. I will post the program later today or sometime this weekend.

Benjamin's Change Project for School

I picked up Benjamin the other day and on his daily sheet it said that the kids were to look under the couch cushions and anywhere else to find change and they were going to collect the change for the children who have parents in jail for Christmas. The church was doing this as a project. I asked Benjamin what they were doing, just to see what he would say and he said "Mommy we are collecting money for the poor children. We need to find lots of money. What's money?" He knows what money is, I think he likes to test me to see what I would say. So I explained and he said "oh, can we go to Target?" That's our son.

Food For Thought Friday


For all that don't know me, I don't cook and when I do cook, I have gotten recipe from someone and have already tried it. This recipe I received from my friend, Ms. Sue. This is an awesome recipe!!! I have made it over and over again.

Hash Brown Casserole

1 - 2 lb bag frozen hash brown potatoes (I use shredded)
1/2 cup chopped onion
1/2 cup melted margarine; reserve 1/2 for top
10 oz grated cheddar cheese
1 can cream of celery soup (I use 2)
1 t. salt
1/2 t. pepper
1 c. sour cream (I use 2 cups)
Corn Flakes (enough fo the top of the casserole)

Mix all ingredients together except 1/2 margarine with cracker crumbs. Put in greased 9 x 13 casserole. Sprinkle with buttered Corn Flakes. Bake 1 hour at 350 degrees.

Benjamin visits the Doctor


Yesterday we had a very eventful day. It was my birthday and my son got a flu shot. We were all worried about the flu shot. He hasn't got a shot since he was 1. We got there and Dr. Chapman asked us if he new what was going to happen. I told her the only thing he knew what that he was getting a shot. I still didn't think he got the concept though. Anyway, Dr. Chapman explained to him what was going to happen. What was funny was the doctor and the nurse were trying to decide which one of them were going to give the shot. Anyway, to make a long story short, the nurse ended up doing it and Benjamin didn't cry one tear!!! Dr. Chapman was very surprised that he didn't cry because the last patient who was 3 screamed and cried after getting the flu shot. Benjamin said after getting the shot "I'm a strong boy mommy, it didn't hurt at all." I am so proud of him!!!!

I went to a party, Mom,

You told me not to drink, Mom,

So I drank soda instead.
I really felt proud inside, Mom,
The way you said I would.

I didn't drink and drive, Mom,
Even though the others said I should.

Six Weird Things About Me...

A first for me!
Well, Jen has tagged me! I've never "played" before so here are the rules:

According to the rules…Each player of this game starts with the “6 weird things about you”. People who get tagged need to write a blog of their own 6 weird things as well as state this rule clearly. In the end, you need to choose 6 people to be tagged and list their names. Don’t forget to leave a comment that says “you are tagged” in their comments and tell them to read your blog

1. I dislike lemon juice or straight lemons. There is a story behind this. I was around 5, when my mom had the fridge door open and I insisted on drinking what was in that nice green bottle (lemon juice). My mom kept telling me "No you don't want that. You won't like it." My brother and sister (in the background) were chanting "Give it to her, Give it to her." Needless to say, she ended up giving it to me and my mom,sister, and brother to this day say that the look on my face was priceless.

2. I hate wire hangers....we only have white plastic hangers.

3. I can't stand a dirty house.....some people say I am anal about it, but I think it was instilled in my when I was younnger.

4. All I have to do is bend my left big toe and it will make a cracking sound. My brother held me down and cracked it one time and it's never been the same since.

5. I iron my jeans.

6. I can't say wolf....it comes out woof. All of my friends tease me about that...What can I say.

Flat Stanley visited Huntsville, Al all the way from St. Louis, Mo. My nephew, Carter is doing a project for 4th grade. We spent the day showing Stanley around Huntsville. He got to go with his cousin Benjamin to see the Space and Rocket Center, the Botanical Gardens, the Stars baseball stadium, the Redstone Arsenal and many more places.
